These adorable Sheep Cupcakes are as tasty as they are cute! They are perfect for a baby shower table spread. Your guests will love these scrumptious sheep cupcakes.
What you need :
- ¼ cup sour cream room temperature
- ½ cup buttermilk room temperature
- 2 medium eggs
- ¼ cup hot coffee
- ⅓ cup veggie oil
- 2 tsp vanilla extract
- 1 ½ cups all-purpose flour
- 1 ⅓ cup granulated sugar
- ¼ cup cocoa powder
- 1 tsp baking soda
- ½ tsp salt
For the Vanilla Buttercream:
- 1 2/3 lbs icing sugar
- 1 lb butter 450g, unsalted, room temperature
- 1 tsp vanilla extract
- 1 tbsp milk
- 1/2 tsp salt
- For the decoration:
- 1/4 cup fondant
- 4 cups mini marshmallows 200g
- 36 candy eyes
- black food colouring
How to Bake:
- Preheat to 350F.
- Sift the dry ingredients into the bowl of a stand mixer and whisk.
- Add the wet ingredients into a large bowl and whisk together, then add both together.
- Whisk until smooth
- Spoon or pipe the batter into the cupcake papers and bake for 15 -20 minutes
- Leave to cool
For the Vanilla Buttercream:
- Beat the butter until fluffy.
- Sift the icing sugar into the butter.
- Add 1 tsp vanilla, 1/4 tsp salt, and the milk.
- Spoon into a piping bag.
How to assemble
- Use food colouring to dye the fondant black.
- Cut out the faces, eyes and ears
- Brush water on the fondant to make the ears and eyes stick to the head.
- Pipe the buttercream onto your cupcake
- Cover with marshmallows then place the sheep face on
