Carrot Cake Squares
Who wants one of these scrumptious iced carrot cake squares? These adorable carrot cake squares are quick and easy to make and taste amazing! They will fly off the plate. Perfect for picking up, popping into a bunny napkin and nibbling on. These super tasty carrot cake slices will have your guests hopping back and forth to your adorable easter table spread for more!
What you need :
- 4 eggs
- 2 cups of flour
- 1 16 oz of carrots
- 2 cups of sugar
- 1 1/4 cups of vegetable oil
- 1/2 tsp salt
- 2 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/2 cup of chopped walnuts
- Small candy carrots (which can be purchased from most bakery supply stores)
- Icing sugar
- Water
How to Make :
- Preheat oven to 350C
- Process carrots in blender or food processor. Combine all cake ingredients and mix well. Stir in walnuts.
- Place into lined and greased baking tin. Bake for 25-30 minutes or until toothpick comes out clean. Let cool.
- Mis icing sugar with water for desired thickness.
- Spread on carrot cake
- Cut into squares.
- Top off each square with a small candy carrot
